  William Younger in his book, "Gods, Men and Wine",said,¡±A bunch of grapes is beautiful, static and innocent. It is merely a fruit. But when it is crushed it becomes an animal, for the crushed grapes become wine and wine has an animal life." Cui Caihong, Chief engineer of Beijing Harvest Wine Company,is such kind of winemaker who¡¯s career is making wine.

Since graduation from Mongolia Agricultural University in 1995,Cui Caihong has been working in Beijing harvest company at least 20 years.

 

During the 20 years,she worked from laboratory technician,workshop director to the company¡¯s chief engineer in charge of wine production,technology and quality.

Besides senior winemaker,state first level wine taster,Cui Caihong has many other titles in the industry,member of Chinese wine technology committee,Chinese wine chateau review committee,and China national wine quality supervision and inspection expert committee.

 

"In different ways, feel really is a very lucky man, especially on the job." Cui Caihong said, she just to harvest in 1995, is to catch up with the company expanding new factory, products from sweet wine to the first year of dry type wine transformation, the company is accelerating cultivation production, technical personnel and a good time to establish a quality management system.

"I think I¡¯m very lucky,especially on my work.In 1995,it¡¯s expanding for a new winery when I just came here.And it¡¯s the first year we make transition from sweet wines to dry wines.¡±said she.Then she continued that,¡±But at that time,the conditions were not good,the work,life and traffic.The winery were surrounded by vineyards,so I devoted all my time to work,walking to the vineyards and communicating with growers." 

 

20 years passed so quickly,now she can¡¯t leave the wine work.In her eyes,wine has life.It¡¯s her works,not just a product.With her lead,their wines have achieved remarkable results on wine competitions.Harvest brand become the first list of China famous brand.

She believed that wine was not "petit bourgeoisie sentiments",luxury products,it¡¯s for mass consumption.So someone said wine is a way of life.It¡¯s also the responsibility of winemakers.


 

"Chinese wine industry has experienced fast development in the past 20 years.Currently,viticulture is the wake point,compared with the construction of winemakers team,equipment and technology.If we want to make the stylistic and high-end wines,first of all we need to focus on vineyards.Also we need to learn from other advanced countries.To make the world class wines,is the responsibility and mission for contemporary winemakers."
